Ellie joined the Lions as a Freshmen in the Fall 2022 season. During her time here she has earned many career honors and awards those being 2024 All-American Honorable Mention, 2024 All-Region Honorable Mention, 2024 Conference Carolina's Offensive Player of the Year, and 2024 1st Team All-Conference.  

In Ellie's 2024 career she appeared in all 31 matches, playing in 109 sets. She accumulated 406 kills, averaging 3.76 kills/set. She has a career high of 23 kills against Alabama Huntsville. Ellie also picked up 430 digs, averaging 3.98 digs/set. She had 35 services aces and 41 blocks, also had 18 double-doubles on the season. Jackson achieved a career high of 27 digs twice during the season. Ellie was the Conference Carolina's Player of the Week 3 times during the season. She was also named to the UAH-Inviational All-Tournment Team and the 2024 Kathleen Brasfield Invitaional All-Tournment Team in the opening two weekends. 
In her 2023 career she appeared in 33 matches, playing in 123 sets. Ellie served primarily as a DS as she recovered from an injury in 2022. Ellie picked up 383 total digs on the season with a season high of 26 digs. She accumulated 103 kills, 48 services aces, and 5 blocks. 
In her 2022 career Ellie was redshirted for the 2022 season after sustaining an injury two weeks before the season as a camp counselor. 

During Ellie's high school/club career she was a 4-year starter at Mandarin High School in Jacksonville, Flordia. 

Ellie is the daughter of Corey (her father won a National Championship in baseball at the University of Tampa in 1992) and Katrina Jackson. Ellie has a brother, Ty Jackson. Athleticism runs in the family as her brother Ty plays for the Savannah Bananas. Ellie is a Kinesiology major with a concentration in pre-physical therapy. Ellie's favorite Bible Verse is Psalm 46:5, "God is within her, she will not fall; God will help her at break of day."
